What's in a name?

I love to eat and I have veganized a lot of my favourite things. Some successfully, some less successfully. And there are things that I really like, such as steak, but don't eat, because meat, but I also don't eat the meat substitutes generally.

I have found through a lot of trial and error that I do not like vegan sausages. Vegan mock meats tend to have this very weird smell to them that I find really gross. I don't know what it is but most have turned my stomach. The exception? Veg chicken nuggets. They taste exactly like chicken nuggets. It's weird but true.

Or vegan cheese. I am sorry to say that I just am not a fan of Daiya, it also has a weird smell and the texture when heated turns my stomach. On the other hand Culchered smoky cheddar and Zengarry cheeses generally are great substitutes to put in pasta or on toast. But nothing is the same as a really good cheese.

What I've also found is that a lot of these 'substitutes' are full of chemicals and things that I don't think I want to eat (looking at you, Palm Oil). I've decided to embrace the things I love, but if I really want to have pizza, I am more likely these days to have the pizza with good cheese. Trying to find places that use nice ingredients so that it's not the worst common denominator all the time.

The other day, I really wanted Kraft Dinner but didn't want to have the cheese because, well, veg forward. Then I remembered that I bought some Annie's Vegan Mac when in the US last month... so of course I went for that...

Very Kraft Dinner-y... super good. I broiled a veggie burger and cut it up inside for some texture and flavour. Really nice.

Ooohhhh... I've got boxed Mac now, too!

And it was great. I am trying to make sure that my days are mostly vegetarian with a strong lean towards vegan. But it's not perfect, and I have to make sure that I don't make myself crazy (';' right?) so this gave me the need for comfort food with the goodness of Annie's. (AND if you follow Weight WAtcher's, it's fewer points than KD, too! Woot!)

Which brings me round again to being VEG Forward (FWD). It's reasonable. My last few weeks have seen me at probably 95% Vegetarian, with about 80% of that being Vegan, and maybe 5% meat. I don't even know that it's that high, really. But it doesn't need to be an exact science. It just needs to be tasty.

And a recipe! I made Minimalist Baker's Green Bean Casserole for Thanksgiving this past weekend. It was amazing!

It was one of my Mom's favourite Thanksgiving accompaniments, so of course, for my all-vegan meal, I wanted to have something creamy. For the milk, I used oat milk, which I really really like. It's creamy, it doesn't add a lot of flavour to things (except when I use it in tea it tastes like tea with cereal milk). I'd like to try it in an ice cream, to be honest. I think it might be delicious!

I also made Pumpkin Spice Cupcakes (from It Doesn't Taste Like Chicken). It made more of a pumpkin bread than a cupcake, and I didn't have icing sugar to make frosting, but overall they were amazing. I really enjoyed them. So delicious!

There are so many great blogs. I want to create a blog list for here that shows some of the places that I love visiting. And the foods I like, as well. But first... I've got this bag of fauxmagerie to eat...
